Green, herbaceous notes of artichoke and wheat grass are indicative of harvesting this variety early. Early harvest results in a a loss of yield but an increase in quality markers listed below. High phenolic content and low free fatty acids (FFA) make this ideal for cooking.  Lingering pungency!
